A cake is finished when there is nothing left to take away.
Matei trained in Lyon and spent ten years in hotel kitchens. There he learned one thing: the best desserts are the simplest ones, as long as every ingredient is right.
Back in his home town, he opened a small atelier in 2018. It still makes no more than twenty cakes a day, each glazed by hand, the gold leaf set with tweezers. That's the limit if you want to do it properly.
